This recipe is for 2 loaves, but since I made it for my work and have quite a few co-workers I doubled the recipe, so the pictures look like I am making it for an Army (which might as well be the same thing lol).
Pumpkin Chocolate Chip Bread
Ingredients Needed:
(for 2 loaves)
- 3 1/3 cups unbleached all purpose flour
- 1 tsp pumpkin pie spice
- 1 tbsp cinnamon
- 2 tsp baking soda
- 1 tsp baking powder
- 1 1/2 tsp salt
- 2 2/3 cups sugar
- 2/3 cups softened unsalted butter
- 4 eggs
- 30 oz can pure pumpkin
- 2/3 cups water
- 1 cup semi-sweet chocolate chips
Directions:
- Preheat the oven to 325 degrees.
- Sift together all of the dry ingredients and set aside.
- Cream the sugar and butter together.
- Add eggs one at a time to the sugar/butter mixture.
- Mix in the pure pumpkin.
- Alternate adding dry ingredients and water.
- Fold in chocolate chips. (yes, it says 1 cup... don't limit yourself to 1 cup... just saying)
- Pour into large, greased bread pans and bake for 55-60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
