Pumpkin Chocolate Chip Bread

The other day I ate a pumpkin chocolate chip cookie and my mouth was craving more and more the rest of the day, so I decided to look up how to make them and came across a pumpkin chocolate chip bread that I wanted to try instead!

This recipe is for 2 loaves, but since I made it for my work and have quite a few co-workers I doubled the recipe, so the pictures look like I am making it for an Army (which might as well be the same thing lol). 

Pumpkin Chocolate Chip Bread

Ingredients Needed:
(for 2 loaves)
  • 3 1/3 cups unbleached all purpose flour
  • 1 tsp pumpkin pie spice
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • 2 2/3 cups sugar
  • 2/3 cups softened unsalted butter
  • 4 eggs
  • 30 oz can pure pumpkin
  • 2/3 cups water
  • 1 cup semi-sweet chocolate chips
Directions:
  1. Preheat the oven to 325 degrees.
  2. Sift together all of the dry ingredients and set aside.
  3. Cream the sugar and butter together. 
  4. Add eggs one at a time to the sugar/butter mixture.
  5. Mix in the pure pumpkin.
  6. Alternate adding dry ingredients and water.
  7. Fold in chocolate chips. (yes, it says 1 cup... don't limit yourself to 1 cup... just saying)
  8. Pour into large, greased bread pans and bake for 55-60 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
